Duties:
- Prepare and deliver breakfast, lunch, dinner, and evening snacks according to USDA and DC Department of Health guidelines.
- Ensure meals meet nutritional standards, including specific dietary needs such as Heart Healthy, Therapeutic, and Special diets.
- Maintain food supplies, materials, and equipment required for meal preparation and delivery.
- Develop and submit cycle menus for heart-healthy, Therapeutic, and Special diets on a quarterly basis.
- Ensure menus are approved by a registered dietitian and comply with all nutritional requirements.
- Provide a nutritional analysis of meals and submit any menu changes for approval.
- Store perishable food items at proper temperatures to prevent spoilage and contamination.
- Maintain adequate inventory and implement stock rotation procedures.
- Comply with all federal, state, and local licensing and regulatory requirements.
- Maintain records of dietary orders, menu substitutions, and inventory.
- Develop and implement an emergency plan to ensure continuity of food services during unforeseen circumstances.
- Ensure all staff involved in food preparation, delivery, and handling meet health and safety regulations.
- Provide ongoing training for staff in food handling, sanitation, and safety procedures.
- Experience in food service management, preferably in a similar setting.
- Knowledge of USDA and DC Department of Health guidelines for meal preparation.
- Ability to develop and implement cycle menus and nutritional analyses.
- Strong organizational and communication skills.
