Duties:

  • Oversee all daily operations of the dining facility, ensuring compliance with Air Force and federal sanitation and safety regulations.
  • Supervise and manage staff, including mess attendants and support personnel, ensuring tasks are completed efficiently and professionally.
  • Develop and maintain staff schedules to ensure adequate coverage during all meal periods, including weekends.
  • Monitor inventory of cleaning supplies, kitchen equipment, and other materials, ensuring timely re-stocking to prevent operational delays.
  • Ensure proper sanitation practices in all areas, including tableware, kitchen equipment, and dining areas, following AFI 48-116 and FDA Food Code standards.
  • Coordinate with kitchen staff to maintain efficiency and timeliness in meal preparation and service.
  • Address and resolve customer complaints or requests promptly to ensure high levels of satisfaction.
  • Conduct regular inspections to verify adherence to cleanliness, safety, and operational standards.
  • Manage budgets effectively, ensuring cost control without compromising service quality or facility operations.
  • Provide training to staff on safety procedures, proper equipment handling, and hygiene requirements.


Requirements:

  • High school diploma or GED (Bachelor's degree in hospitality management or a related field is preferred).
  • Minimum of 3 years of experience in food service or dining facility management, preferably in a military or institutional environment.
  • Knowledge of food safety, sanitation, and operational standards for dining facilities.
  • Strong leadership and organizational skills with the ability to manage and motivate a team effectively.
  • Proficiency in budgeting, cost control, and inventory management.
  • Excellent communication skills for coordinating with staff and patrons.
  • Physical ability to stand for extended periods and lift up to 50 lbs.
  • Familiarity with federal and Air Force regulations, including AFI 48-116 Food Safety Program.
