Professional Cook
Job Type: Full-Time / Contract Position
Work Schedule: Daily food service coverage, including weekends and holidays, in support of breakfast, lunch, and dinner operations.
Place of Performance
Services will primarily be performed at the Marine Security Guard Residence (MSGR), U.S. Embassy Kuala Lumpur, Malaysia.
Period of Performance
One 12-month base period, with up to four additional one-year option periods, subject to contract award and exercise of the options.
Summary
The MSG Detachment Cook will provide daily food service support for up to 10 U.S. Marine Security Guards, preparing and supporting three meals per day: breakfast, lunch, and dinner.
The Cook will serve as the culinary lead for the food service operation and will be responsible for menu planning, food preparation, food storage, kitchen and dining-area cleanliness, food safety, and meal presentation.
The position requires dependable daily meal support, including weekends and holidays, as services are required 365 days per year. The normal meal service periods are breakfast from 7:00 a.m.–9:30 a.m., lunch from 11:00 a.m.–1:30 p.m., and dinner from 5:00 p.m.–7:30 p.m.
Requirements
- Must have a minimum of 3 years of experience managing food service operations.
- Must have demonstrated experience providing high-quality or premium-level food preparation and service.
- Must have experience preparing a variety of meals and managing daily kitchen operations.
- Must be capable of developing and executing rotating menus.
- Must understand proper food handling, sanitation, storage, and kitchen safety practices.
- Must be able to prepare nutritionally balanced meals and accommodate dietary, cultural, religious, and vegetarian needs.
- Must be able to maintain accurate food storage and inventory practices.
- Must maintain professional appearance and appropriate food-service attire.
- Must be able to comply with required background screening and facility access procedures.
- Must follow applicable food safety requirements, including HACCP-related practices and applicable FDA, USDA, and Codex Alimentarius standards.
- Must be dependable and available to support daily meal operations, including weekends and holidays.
Duties
- Prepare and support breakfast, lunch, and dinner daily for up to 10 Marine Security Guards.
- Develop and maintain a 14-day rotating menu cycle.
- Prepare fresh, high-quality meals using appropriate cooking methods and portion sizes.
- Provide a variety of American, local, regional, and international meal selections.
- Ensure at least one healthy meal option is available as required.
- Accommodate identified dietary restrictions, religious requirements, health needs, and vegetarian preferences.
- Coordinate menus and food-service requirements with designated personnel.
- Assist with identifying and sourcing high-quality food products and ingredients.
- Support food purchasing and provisioning activities as required.
- Properly receive, store, label, rotate, and protect food products.
- Monitor food quality, freshness, temperatures, and storage conditions.
- Maintain clean and sanitary kitchen, food preparation, storage, serving, and dining areas.
- Wash and sanitize dishes, cookware, utensils, equipment, and appliances after meal service.
- Prevent cross-contamination and maintain proper food-handling procedures.
- Follow HACCP principles and established food-safety procedures.
- Maintain appropriate portion control and minimize food waste.
- Monitor inventory and communicate food or supply needs.
- Maintain required food-service records, logs, and supporting documentation.
- Support meal headcount tracking and other required food-service reporting.
- Maintain kitchen equipment responsibly and report equipment problems promptly.
- Provide professional and courteous service to Marine Security Guard personnel.
- Comply with all applicable safety, sanitation, security, and workplace requirements.
