Job Title: Kitchen Attendant
Location: Middletown, PA
Duties:
- Shall maintain cleanliness of the kitchen, scullery, dining room, serving area, walk-in cooler/freezer, and hand wash area.
- Shall clean up any spills at any location within the kitchen, dining room, scullery, hand wash area and serving area within 5 minutes of the time of notification or witnessing the spill.
- Shall ensure all drain traps and troughs are free of all food particles at the end of each duty day, or upon request, whichever is more frequent.
- Shall sweep all areas no less than daily and wet mop all areas no less than once every other day.
- Shall remove all trash from the facility and replace trash bags in empty trash receptacles in all locations of the facility.
- Shall wash, rinse, sanitize and air dry items including, but not limited to cookware, serveware, tableware, and utensils, after each use.
- All cookware shall be clean and available for immediate use in the preparation of food by kitchen staff.
- Shall manually wash items using three compartment sink, applying chemical cleaner and sanitizers, and use the dish washing machine.

- Equipment shall be used properly in accordance with the manufacturer instructions.
- Shall replenish tableware, including but not limited to: utensils, dishes, glasses, bowls, and trays; and ensure immediate availability at any given time.
- Shall replenish condiments, including but not limited to: napkins, salt, pepper, ketchup, mustard, and mayonnaise; and ensure immediate availability at any given time.
- Shall sweep, mop, and wipe down racks in walk-in coolers/freezer; and clean all reach-in refridgerators once per service period at the end of the last duty day of the scheduled drill dates of service.

- Remove hood screens and conduct a thorough cleaning of the hood screens, and the hood itself prior to returning the screens to their original mounted location.
- Empty, clean, and leave the clipper machine to air dry in accordance with the manufacturer’s instructions at the end of each duty day of the scheduled drill dates of service.
- Delime the clipper machine according to manufacturer instructions on no less than a biannual frequency, unless directed by original manufacturers instructions.
- Wipe off all dining tables with sanitizing solution daily.
- Wipe off all dining chairs seats with sanitizing solutions monthly.
- Put chairs up onto the tables prior to sweeping and wet mopping dining area.
- Stack chairs in the dining room prior to sweeping and wet mopping dining area.
- Clean trash receptacles with cleaning solution removing all stains and stuck on refuse, rinse cleaning solution, and allow to air-dry, no less than bi-annually.
- Remove any cobwebs that are found once per weekend.
- Remove all items from cleaning closet, sweep, mop, dust and clean the drain area no less than bi-annually.
Education & Qualifications:
- Shall maintain unexpired certifications, including but not limited to ServSafe Food Handler Certification, and all required licenses for operating in a commercial kitchen.
